Makes 3 chia pots
Ingredients
100g frozen raspberries, thawed
250ml coconut water
1/3 cup water
3 tbsp Harker Herbals Elderberry Vit C + Zinc
1/2 cup chia seeds
1 tbsp ground flaxseeds
To Serve
3–4 tbsp Greek-style coconut yoghurt or dairy yoghurt
Optional Toppings
Fresh fruit
Cacao nibs
Toasted nuts
Coconut chips

Method
Add the thawed raspberries, coconut water, water, and Harker Herbals Elderberry Vit C + Zinc to a bowl or jug and whisk well to help break down the raspberries slightly.
Whisk in the chia seeds and ground flaxseeds until well combined.
Leave for a few minutes, then whisk again to help prevent clumps forming.
Divide between 3 jars (at least 300ml capacity each).
Refrigerate for at least 2 hours, preferably overnight, until thickened and set.
Top with yoghurt and your favourite toppings before serving.
