Iron Boost Bar

Feeling a bit flat? Low iron levels could be the culprit. Enter Harker Herbals Iron Boost—a great-tasting, non-constipating liquid supplement that’s gentle on digestion and suitable for the whole family.

Storage tip: Keep in the freezer for a firmer bar or the fridge for a softer texture. Feel free to double the recipe for a bigger batch!


Ingredients:

  • 1 cup desiccated or shredded coconut
  • 1 cup LSA (ground linseed, sunflower seed and almond – you can find this in the health food section of most supermarkets)
  • ½ cup goji berries
  • 1 tbsp Iron Boost
  • 2 tsp Harker Herbals GutBiome Balance daily powder – if you’re serving to children under 12, use the kid friendly option
  • 1 tsp vanilla
  • ½ tsp cinnamon
  • 5-6 soft medjool dates, soaked in hot water for 15 minutes
  • Dark chocolate squiggle to finish, optional


Method:

  • In a food processor, blend together all the ingredients apart from the dates, then, as the processor is running, add the softened dates one at a time.
  • You should have a nice sticky dough that holds together.
  • Press into a small, lined container. The glass one I have used is around 15cm x 10cm.
  • Place in the freezer to set.
  • Slice, and finish with the drizzle if you like.
  • Keep in the fridge or freezer.
